The Pitmaster's Old Fashioned

Built · Glass: Rocks
  • Peg Leg Porker Bourbon 2 oz
  • Demerara syrup 1 bar spoon
  • Angostura bitters 2 dashes
  • Orange peel 1 strip
  • Brandied cherry 1

Build over a single large cube. Stir 30 seconds. Express orange peel over the glass, drop it in, and add the cherry. The way it ought to be.

Smoked Manhattan

Stirred · Glass: Coupe
  • Peg Leg Porker 8 Year 2 oz
  • Sweet vermouth 1 oz
  • Angostura bitters 2 dashes
  • Hickory smoke brief kiss
  • Brandied cherry 1

Stir over ice. Smoke the empty coupe with a hickory chip; strain the cocktail in. Garnish with a cherry. Sip slow.

Paper Plane (Pitmaster Edit)

Shaken · Glass: Coupe
  • Peg Leg Porker Bourbon 0.75 oz
  • Aperol 0.75 oz
  • Amaro Nonino 0.75 oz
  • Fresh lemon juice 0.75 oz

Equal parts to a shaker. Shake hard with ice. Double-strain into a chilled coupe. Bright, bitter, and easy to make a habit of.

Tennessee Julep

Built · Glass: Julep Cup
  • Peg Leg Porker 12 Year 2.5 oz
  • Demerara syrup 0.5 oz
  • Fresh mint 10 leaves
  • Crushed ice to top

Lightly muddle mint with syrup in a julep cup. Add bourbon and crushed ice. Swizzle until the cup frosts. Garnish with a generous mint bouquet.

Bourbon Sour, House Style

Shaken · Glass: Rocks
  • Peg Leg Porker Bourbon 2 oz
  • Fresh lemon juice 0.75 oz
  • Demerara syrup 0.5 oz
  • Egg white 1
  • Angostura bitters 3 drops

Dry shake (no ice) hard, 15 seconds. Add ice and shake again. Strain over fresh ice. Three drops of Angostura, dragged through the foam with a toothpick.

Smoked Peach Highball

Built · Glass: Highball
  • Peg Leg Porker Bourbon 1.5 oz
  • Smoked peach syrup 0.5 oz
  • Fresh lemon juice 0.5 oz
  • Soda water top
  • Peach slice garnish

Build in a Collins glass over ice. Top with soda. Stir gently. Garnish with a grilled peach slice. Summer in a glass.
